Chicken: 2 pounds chicken thighs or breasts, cut into cutlets or tenders (thighs stay juicier)
Buttermilk: 1.5 cups (or whole milk + 1 tablespoon lemon juice or vinegar as a substitute)
Hot sauce (optional): 1–2 teaspoons for the marinade
All-purpose flour: 1.5 cups
Cornstarch: 1/2 cup
Baking powder: 1 teaspoon
Kosher salt: 2 teaspoons (plus extra for seasoning)
Black pepper: 2 teaspoons
Paprika: 2 teaspoons (smoked or sweet)
Garlic powder: 2 teaspoons
Onion powder: 1 teaspoon
Dried thyme or oregano: 1 teaspoon
Cayenne pepper: 1/4 to 1/2 teaspoon (optional for heat)
Neutral oil for frying: Canola, peanut, or vegetable oil
Optional for serving: Pickles, buns, coleslaw, honey, or your favorite sauce
Method
Prep the chicken: Trim excess fat. If using breasts, slice horizontally into thin cutlets. Pat dry and sprinkle lightly with salt and pepper.
Marinate: In a bowl, combine buttermilk and hot sauce. Add chicken, toss to coat, and refrigerate for 30 minutes to 2 hours. Longer equals juicier.
Make the dredge: In a shallow dish, whisk flour, cornstarch, baking powder, salt, black pepper, paprika, garlic powder, onion powder, thyme, and cayenne.
Double-dip for extra crunch: Remove chicken from buttermilk, letting excess drip off. Dredge in the flour mix, press firmly to coat. Dip back into buttermilk briefly, then into flour again. Press to form craggy bits—those turn extra crispy.
Rest the coated chicken: Place on a wire rack for 10–15 minutes. This helps the coating stick and crisp.
Heat the oil: In a heavy skillet or Dutch oven, add 1–1.5 inches of oil. Heat to 350°F (175°C). Keep a thermometer handy to maintain temperature.
Fry in batches: Add chicken without crowding. Fry 4–6 minutes per side for cutlets or tenders, 6–8 minutes total if smaller. Aim for 165°F (74°C) internal temperature.
Drain and season: Transfer to a wire rack set over a baking sheet. Sprinkle a pinch of salt while hot for a final flavor boost.
Alternate air fryer method: Spray chicken lightly with oil. Air fry at 380°F (193°C) for 10–14 minutes, flipping halfway and spraying again, until golden and cooked through.
Alternate oven method: Place on a greased rack over a baking sheet. Mist generously with oil. Bake at 425°F (220°C) for 18–24 minutes, flipping halfway, until crisp and done.
Serve: Enjoy as is, stack on buns with pickles and slaw, or slice over salad. A drizzle of honey or spicy mayo is great.
Notes
Refrigerate: Cool completely. Store in an airtight container for up to 4 days.
Freeze: Freeze on a sheet pan until solid, then move to a freezer bag. Keep up to 2 months.
Reheat: For best crispness, use an air fryer at 375°F (190°C) for 5–8 minutes or an oven at 400°F (205°C) for 10–12 minutes. Avoid microwaving—use only for quick reheats if needed.
