Cucumber salad is the kind of side dish you make once and keep coming back to all summer. It’s crisp, cool, and incredibly simple, yet it feels special every time it hits the table. You can throw it together with pantry staples, or dress it up with herbs and a touch of sweetness.
2 large cucumbers (English or Persian are best for fewer seeds and thin skins)
1/4 small red onion, very thinly sliced (or 2 scallions, finely sliced)
1/4 cup vinegar (rice vinegar for mellow tang, or apple cider/white wine vinegar)
1 to 1 1/2 tablespoons sugar or honey, to taste
1/2 teaspoon kosher salt, plus more for salting cucumbers
1/4 teaspoon black pepper
2 tablespoons olive oil (optional for a silkier finish; skip for a lighter version)
2 tablespoons fresh herbs, chopped (dill, mint, parsley, or a mix)
1 teaspoon sesame seeds or poppy seeds (optional, for texture)
Pinch of red pepper flakes (optional, for heat)
1 small clove garlic, finely grated (optional, for a bolder flavor)
Method
Prep the cucumbers. Wash and pat dry. If using thick-skinned cucumbers, peel partially or fully.Slice into thin rounds or half-moons, about 1/8 inch thick. Thinner slices soak up dressing better.
Salt and rest. Place the sliced cucumbers in a colander set over a bowl. Toss with 1 teaspoon salt and let sit for 10–15 minutes. This draws out extra water so the salad stays crisp.
Pat dry. Rinse briefly to remove excess salt, then pat the cucumbers dry with a clean towel or paper towels. Don’t skip drying; it keeps the dressing from getting diluted.
Slice the onion. Cut the red onion into thin slivers. If you’re sensitive to sharp onion flavor, soak the slices in cold water for 5 minutes, then drain.
Make the dressing. In a small bowl, whisk together vinegar, sugar or honey, 1/2 teaspoon salt, black pepper, and olive oil (if using).Add the garlic and red pepper flakes, if desired. Taste and adjust for sweetness and acidity.
Toss the salad. In a large bowl, combine cucumbers, onion, and herbs. Pour the dressing over and toss gently to coat.Sprinkle with sesame or poppy seeds, if using.
Rest briefly. Let the salad sit for 5–10 minutes to meld flavors. For a stronger flavor, refrigerate for 30 minutes before serving.
Serve. Taste and adjust salt, pepper, and sweetness before serving. Add a squeeze of lemon if you want an extra-bright finish.
