Ingredients

  • 1/2 cup (113 g) unsalted butter, softened
  • 3/4 cup (180 g) creamy peanut butter (stirred if natural; avoid overly oily or dry)
  • 1/2 cup (100 g) granulated sugar
  • 1/2 cup (110 g) packed light brown sugar
  • 1 large egg, room temperature
  • 1 1/2 teaspoons vanilla extract
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon fine salt
  • 1 cup (125 g) all-purpose flour
  • 1 1/2 cups (150 g) old-fashioned rolled oats (not instant)
  • Optional mix-ins: 1/2–3/4 cup chocolate chips, chopped peanuts, raisins, or shredded coconut

Method

  1. Preheat and prep: Heat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Cream the fats and sugars: In a large bowl, beat the butter, peanut butter, granulated sugar, and brown sugar until smooth and slightly fluffy, about 2 minutes.
  3. Add egg and vanilla: Mix in the egg and vanilla until fully combined and glossy.
  4. Whisk dry ingredients: In a separate bowl, whisk flour, baking soda, baking powder, and salt until evenly distributed.
  5. Combine: Add the dry mixture to the wet ingredients. Stir just until you no longer see dry flour.
  6. Fold in oats: Gently fold in the rolled oats. If using, stir in any mix-ins like chocolate chips or chopped nuts.
  7. Portion: Scoop dough into 1 1/2-tablespoon mounds (about a heaping tablespoon) and place 2 inches apart on prepared sheets.
  8. Optional flatten: Lightly press each mound with damp fingers or the bottom of a glass to help them spread evenly.
  9. Bake: Bake 9–12 minutes, until edges are set and lightly golden and centers still look slightly soft.
  10. Cool: Let cookies rest on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely. They firm up as they cool.

Notes

  • Room temperature: Store cooled cookies in an airtight container for 4–5 days. Add a small piece of bread to keep them soft.
  • Freezer (baked): Freeze in a sealed bag or container for up to 3 months. Thaw at room temperature.
  • Freezer (dough): Scoop dough into balls, freeze on a tray until firm, then bag. Bake from frozen at 350°F (175°C) for 10–13 minutes.
