If you crave the rich, creamy comfort of Olive Garden’s Alfredo sauce, this simple copycat version brings that same silky texture and cheesy depth right to your kitchen. It’s quick enough for a weeknight but special enough for company. The secret is quality dairy, gentle heat, and freshly grated che

Ingredients

  • 1 cup heavy cream (avoid light cream or half-and-half for best texture)
  • 1/2 cup unsalted butter (1 stick)
  • 1–2 cloves garlic, finely minced (or 1/2 teaspoon garlic paste)
  • 1 1/2 cups freshly grated Parmesan cheese (Parmigiano-Reggiano preferred)
  • 1/2 cup grated Romano cheese (optional but boosts that restaurant flavor)
  • Salt to taste (start with 1/4 teaspoon and adjust)
  • Freshly ground black pepper to taste
  • Pinch of nutmeg (optional; adds warmth and depth)
  • Cooked pasta of choice (fettuccine is classic)
  • Chopped parsley for garnish (optional)

Method

  1. Warm the dairy base: In a medium saucepan over low to medium-low heat, melt the butter. Add the heavy cream and whisk to combine. Let it warm gently until steam rises, 3–5 minutes. Do not boil.
  2. Bloom the garlic: Stir in the minced garlic and cook for 30–60 seconds, just until fragrant. Keep the heat gentle so the garlic doesn’t brown.
  3. Add the cheeses gradually: Reduce the heat to low. Sprinkle in the Parmesan (and Romano, if using) a small handful at a time, whisking continuously. Let each addition melt fully before adding more.
  4. Season smartly: Add a pinch of salt, a few grinds of black pepper, and a small pinch of nutmeg. Taste and adjust—Parmesan is salty, so you may need less salt than you think.
  5. Find the right texture: If the sauce seems too thick, whisk in 1–2 tablespoons of warm pasta water or a splash more cream. If too thin, let it gently simmer for another minute, whisking, until it lightly coats the back of a spoon.
  6. Toss with pasta: Add cooked, hot pasta directly to the pan and toss until every strand is glossy and coated. The sauce will cling better to hot pasta.
  7. Finish and serve: Garnish with parsley and a touch more Parmesan. Serve immediately while warm and silky.

Notes

  • Refrigerator: Store leftover sauce in an airtight container for up to 3 days. It will thicken when cold.
  • Reheating: Warm over low heat with a splash of cream or milk, whisking until smooth. Avoid high heat to prevent separation.
  • Freezing: Not ideal. Dairy-based sauces can split when thawed, causing a grainy texture.
  • Make-ahead tip: You can grate the cheese and measure ingredients in advance. For best texture, cook the sauce fresh right before serving.
