Method
Prep the potatoes. Heat your oven to 425°F (220°C). Toss diced potatoes with olive oil, salt, pepper, and smoked paprika or chili powder if using. Spread on a large sheet pan in a single layer.
Roast until crispy. Bake for 25–35 minutes, flipping once halfway through. They’re done when the edges are golden and the centers are tender. For extra crisp, broil for 1–2 minutes at the end.
Cook the meat. While the potatoes roast, warm a large skillet over medium-high heat. Add the ground beef or turkey and cook, breaking it up, until browned and cooked through. Drain excess fat if needed.
Add aromatics and seasoning. Stir in onion and cook until softened, 3–4 minutes. Add garlic and cook 30 seconds. Sprinkle in taco seasoning, tomato paste, and pour in water or broth. Stir and simmer 2–3 minutes until thick and glossy.
Add beans and corn. Mix in black beans and corn. Warm through for 2–3 minutes. Taste and adjust salt, pepper, or seasoning.
Build the bowls. Divide the crispy potatoes among bowls. Top with the taco mixture. Sprinkle generously with shredded cheese so it melts over the hot filling.
Finish with fresh toppings. Add lettuce, tomatoes, red onion, jalapeños, and cilantro. Dollop with sour cream or Greek yogurt. Add guacamole or avocado slices and a spoon of salsa. Squeeze a wedge of lime over the top for brightness.
Serve hot. Bring hot sauce to the table and let everyone customize their bowl. Enjoy right away for the best texture.
Notes
Store components separately. Keep potatoes, meat mixture, and fresh toppings in separate containers. This helps maintain crispness and freshness.
Refrigeration: Potatoes and meat mixture last 3–4 days in the fridge. Fresh toppings are best within 1–2 days.
Freezing: Freeze the taco mixture (without fresh toppings) for up to 2 months. Potatoes can be frozen but may soften; re-crisp in the oven.
Reheating: Reheat potatoes on a sheet pan at 400°F (205°C) for 8–10 minutes to restore crisp. Warm the taco mixture in a skillet with a splash of water. Assemble with fresh toppings right before serving.
