Cheese balls are the kind of holiday appetizer that bring people around the table and keep them there. They’re creamy, savory, and easy to customize, and they look impressive without a lot of effort. A Thanksgiving cheese ball takes that familiar comfort and dresses it up for the season with herbs,

Ingredients

  • Cream cheese (16 oz, full-fat, softened)
  • Sharp cheddar cheese (2 cups, freshly shredded)
  • Sour cream (2–3 tablespoons)
  • Dijon mustard (1 teaspoon)
  • Worcestershire sauce (1 teaspoon)
  • Garlic (1 small clove, finely grated or minced)
  • Green onions (2, finely sliced)
  • Fresh parsley (2 tablespoons, finely chopped)
  • Fresh thyme (1 teaspoon, finely chopped; or 1/2 teaspoon dried)
  • Smoked paprika (1/2 teaspoon)
  • Kosher salt and black pepper (to taste)
  • Pecans (1 cup, chopped and toasted)
  • Dried cranberries (1/2 cup, chopped)
  • Pumpkin seeds (pepitas) (1/4 cup, toasted; optional for extra crunch)
  • Honey (1–2 teaspoons, optional for subtle sweetness)
  • Crackers and vegetables for serving (multigrain crackers, baguette slices, celery, carrots, apple slices)

Method

  1. Toast the nuts and seeds. Add chopped pecans (and pepitas if using) to a dry skillet over medium heat. Stir until fragrant and lightly browned, 3–5 minutes. Cool completely so they don’t melt the cheese mixture.
  2. Soften the cream cheese. Let it sit at room temperature for 30 minutes. This ensures a smooth, lump-free base.
  3. Mix the base. In a large bowl, beat the cream cheese with sour cream until velvety. Stir in Dijon, Worcestershire, garlic, smoked paprika, a pinch of salt, and a few grinds of pepper.
  4. Add the cheeses and herbs. Fold in shredded cheddar, green onions, parsley, and thyme. Taste and adjust seasoning. If you like a whisper of sweetness, mix in the honey.
  5. Shape it. Scrape the mixture onto a piece of plastic wrap. Use the wrap to form a tight ball (or a pumpkin shape—see tip below). Chill for 30–60 minutes to firm up.
  6. Make the coating. On a rimmed plate, combine the cooled pecans, cranberries, and pepitas. Spread them into an even layer.
  7. Roll to coat. Unwrap the chilled cheese ball and roll it in the nut-cranberry mixture, pressing gently to help it stick. Cover and chill at least 1 hour or up to 24 hours so flavors meld.
  8. Serve. Set out 15–20 minutes before guests arrive so it softens slightly. Place on a small board with crackers, baguette slices, and crunchy veggies.

Notes

  • Refrigerator: Keep the cheese ball tightly wrapped or in an airtight container for up to 5 days. For best texture, add the outer coating within 24 hours of serving.
  • Make-ahead: Shape the ball and chill up to 2 days before the holiday. Roll in the nut-cranberry coating the day you plan to serve.
  • Freezer: You can freeze the uncoated cheese ball for up to 1 month. Thaw in the fridge overnight, then roll in the coating just before serving.
