Flourless Pumpkin Muffins Easy – Naturally Moist and Ready Fast

Ingredients
  

  • Pumpkin puree (1 cup; not pumpkin pie filling)
  • Natural creamy almond butter or peanut butter (1/2 cup)
  • Large eggs (2)
  • Pure maple syrup (1/3 cup; honey works too)
  • Vanilla extract (1 teaspoon)
  • Baking soda (1 teaspoon)
  • Cinnamon (1 teaspoon)
  • Pumpkin pie spice (1 teaspoon; or a blend of nutmeg, ginger, and cloves)
  • Fine sea salt (1/4 teaspoon)
  • Apple cider vinegar or lemon juice (1 teaspoon)
  • Optional mix-ins: dark chocolate chips, chopped pecans or walnuts, raisins
  • Optional toppings: pumpkin seeds, coarse sugar, or a light cinnamon sprinkle

Method
 

  1. Prep the pan and oven. Heat the oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease well. Liners make cleanup easy and help the muffins release cleanly.
  2. Whisk the wet ingredients. In a large bowl, whisk together pumpkin puree, almond butter, eggs, maple syrup, and vanilla until smooth and glossy. Aim for a uniform mixture with no streaks of nut butter.
  3. Add dry ingredients. Sprinkle in baking soda, cinnamon, pumpkin pie spice, and salt. Stir until fully combined. The batter should be thick but scoopable.
  4. Add the lift. Stir in the apple cider vinegar. You might see tiny bubbles—this is the baking soda reacting and will help with rise.
  5. Fold in extras. If using chocolate chips, nuts, or raisins, fold them in gently. About 1/2 to 3/4 cup total mix-ins is a good range for 12 muffins.
  6. Fill the cups. Divide the batter evenly among the muffin cups, filling each about 3/4 full. Sprinkle tops with pumpkin seeds or a pinch of cinnamon if you like.
  7. Bake. Place on the middle rack and bake for 16–20 minutes, or until the centers are set and a toothpick comes out with a few moist crumbs.
  8. Cool briefly. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack. They’ll firm up as they cool.
  9. Serve. Enjoy warm or at room temperature. The flavor deepens by day two.
