Ingredients
  

  • 3 pounds potatoes (Yukon Gold or Russet; peeled if you like)
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups shredded cheese (cheddar, Gruyère, or a blend), divided
  • 1 1/2 cups heavy cream (or 1 cup milk + 1/2 cup cream for a lighter version)
  • 3 tablespoons butter
  • 1 teaspoon salt (plus more to taste)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika (optional but delicious)
  • 1 teaspoon fresh thyme leaves or 1/2 teaspoon dried
  • 1/2 cup sour cream or plain Greek yogurt (optional for extra tang)
  • 1/2 cup breadcrumbs or crushed butter crackers (optional topping)
  • Olive oil or cooking spray for the baking dish

Method
 

  1. Prep the oven and dish: Heat the oven to 375°F (190°C). Grease a 9x13-inch baking dish with butter, olive oil, or cooking spray.
  2. Slice the potatoes: Cut potatoes into thin rounds, about 1/8-inch thick. A mandoline makes this fast and even. Rinse and pat dry if starchy.
  3. Make the creamy base: In a saucepan, melt butter over medium heat. Add onion and cook until soft, 4–5 minutes. Stir in garlic for 30 seconds. Pour in cream, add salt, pepper, smoked paprika, and thyme. Warm gently 2–3 minutes. Remove from heat. Stir in sour cream if using.
  4. Layer the casserole: Spread a thin layer of the cream mixture on the bottom of the dish. Add a layer of potatoes, slightly overlapping. Spoon over more cream mixture and sprinkle with a little cheese. Repeat 2–3 times, finishing with potatoes, cream, and the remaining cheese on top.
  5. Add the crunchy topping (optional): Mix breadcrumbs with a drizzle of olive oil and a pinch of salt. Scatter over the cheese.
  6. Bake: Cover loosely with foil and bake 35 minutes. Remove foil and bake another 20–25 minutes, until the top is golden and the potatoes are fork-tender.
  7. Rest and serve: Let the casserole rest 10–15 minutes. This helps it set and slice neatly. Garnish with extra thyme or chives if you like.
