Thanksgiving Side Dishes - Crowd-Pleasing Classics and Simple Upgrades

Ingredients
  

  • Mashed Potatoes: Russet or Yukon Gold potatoes, unsalted butter, whole milk or cream, sour cream (optional), salt, black pepper, chives (optional)
  • Classic Stuffing: Day-old bread cubes, onion, celery, butter, chicken or vegetable broth, eggs, fresh sage, thyme, parsley, salt, pepper
  • Green Bean Casserole: Fresh or frozen green beans, mushrooms, onion, garlic, butter, flour, milk or half-and-half, soy sauce, crispy fried onions, salt, pepper
  • Roasted Brussels Sprouts: Brussels sprouts, olive oil, salt, pepper, balsamic glaze or maple syrup (optional), toasted pecans (optional)
  • Candied Sweet Potatoes: Sweet potatoes, brown sugar, butter, cinnamon, nutmeg, salt, vanilla extract, mini marshmallows or chopped pecans (optional)
  • Cranberry Sauce: Fresh cranberries, granulated sugar or maple syrup, orange juice, orange zest, pinch of salt
  • Turkey Gravy (Side Staple): Pan drippings or stock, butter, flour, salt, pepper, fresh thyme (optional)
  • Seasonal Finishes: Fresh herbs (parsley, sage, rosemary, thyme), lemon zest, flaky salt

Method
 

  1. Mashed Potatoes: Peel and cube potatoes. Boil in salted water until fork-tender (12–15 minutes). Drain well. Mash with warm butter and milk, adding salt and pepper to taste. Stir in sour cream for extra richness and top with chopped chives.
  2. Classic Stuffing: Sauté diced onion and celery in butter until soft. Toss with bread cubes, chopped herbs, salt, and pepper. Whisk eggs with warm broth and fold in to moisten without soaking. Bake covered at 350°F (175°C) for 25 minutes, then uncover and bake 15 minutes more until golden.
  3. Green Bean Casserole: Blanch green beans in salted water for 3–4 minutes; drain. Sauté sliced mushrooms, onion, and garlic in butter. Sprinkle with flour and cook 1 minute. Whisk in milk and a splash of soy sauce; simmer until thick. Combine with beans, top with fried onions, and bake at 375°F (190°C) for 20 minutes.
  4. Roasted Brussels Sprouts: Halve sprouts, toss with olive oil, salt, and pepper. Roast at 425°F (220°C) for 18–22 minutes, shaking the pan halfway. Finish with a drizzle of balsamic glaze or maple syrup and a handful of toasted pecans.
  5. Candied Sweet Potatoes: Peel and slice sweet potatoes into 1/2-inch rounds. Arrange in a buttered dish. Melt butter with brown sugar, cinnamon, nutmeg, vanilla, and a pinch of salt. Pour over potatoes, cover, and bake at 375°F (190°C) for 30 minutes. Uncover, top with marshmallows or pecans, and bake 10 more minutes until caramelized.
  6. Cranberry Sauce: Simmer cranberries with sugar, orange juice, zest, and a pinch of salt over medium heat for 10–12 minutes, until berries burst and mixture thickens. Cool to set.
  7. Turkey Gravy: Melt butter, whisk in flour, and cook 2 minutes to form a roux. Slowly whisk in warm drippings or stock. Simmer until thick and glossy. Season with salt, pepper, and thyme.
  8. Finishing Touches: Before serving, add fresh herbs, lemon zest, or a sprinkle of flaky salt to brighten flavors and make everything pop.
